Well, there is a
build every day. These are developmental versions of Rockbox that may have bugs. The first iriver release is planned for May 1.

If you really feel a need to do that sort of thing, the source code is available, and it's probably not a big deal to switch out the opening graphic and stick in whatever you want. Who knows, maybe someone has done a similar thing and is willing to show you the path to... well, you know.
