Ideally, I'd like it if there were a 'create playlist' option. You click that, then you go along selecting tracks from each album on your DAP. Each time you click on a song it justs adds it to you list, then when you press play it plays your playlist in order.

The first time you press & hold over a track, as you say, you only get "INSERT" which makes that track the first one in the new playlist and starts playing it. If you then navigate to another track, press & hold the joystick button and select "Playlist" you have the following extra options:
Insert
Insert next
Insert last
Insert shuffled
Queue
Queue next
Queue last
Once you have added all the tracks you want in your playlist, press the A-B button on the side and select "Playlist Options" you have the options to "View Current Playlist" and "Save Current Playlist".
At the moment I'm not sure what the difference is between the "Insert" and "Queue" options as they Both add that track into the current playlist.
Still lots of options to investigate
